The first time I experienced cow pie cookies we were visiting Mr. Darlings Gramma in Idaho. They are yummy and so easy to make....And you don't have to bake them. This year as I am pulling together one of a kind Easter basket ideas I decided to make these cookies along with other treats to share with y'all. These cookies are called cow pie cookies hence they sort of look like cow poo. This would be the only cow poo you would ever dare to eat though!

Ingredients:
2 Cups Sugar
4 Tbl. Cocoa Powder
1 Sick butter
1/2 Cup milk
1 Cup peanut butter
1 tsp Vanilla
3 Cups Quick Oats
Directions:
In a saucepan bring sugar, butter and milk to a boil. Boil one minute. Remove from heat. Add vanilla and peanut butter and stir until peanut butter is melted. In a large bowl combine the oatmeal and chocolate mixture. On a sheet pan line with wax paper. Drop by spoonfuls. I flatted them a bit and shaped them into a circular cookie. Allow to harden. You can speed up hardening time by refrigerating. Store in a covered container for up to 1 week for freshness. I put a stack of them in a jar and added a lil cow to the top of the lid for an Easter basket I will be sharing on the blog this week! Enjoy!!!!
